不同基因型核桃雄花营养品质及抗氧化活性分析Analysis of nutritional quality and antioxidant activity of male flowers in walnut

摘要(Abstract):
【目的】分析5个不同基因型核桃雄花营养品质及抗氧化活性的差异,为高效、合理利用丰富的核桃雄花资源提供参考。【方法】以贵州省赫章县核桃产区5个不同基因型盛花期的核桃雄花为试材,测定9种常规营养成分含量、9种矿质元素含量、17种氨基酸含量以及3种抗氧化活性物质和其抗氧化能力。【结果】(1)‘黔核7号’在常规营养成分和矿质营养方面优于其他基因型核桃雄花,‘黔核5号’和‘香玲’在矿质营养方面表现较差,而不同基因型核桃雄花在必需氨基酸和总氨基酸含量上并未达到差异显著水平,但在EAA/TAA的比例上‘黔核7号’(42.01%)和‘黔核8号’(41.98%)最高,‘香玲’(39.40%)最低。(2)不同基因型核桃雄花中‘黔核8号’生物活性成分含量最高,且抗氧化能力最强;‘黔核5号’生物活性成分含量最低,抗氧化能力最差。【结论】不同基因型核桃雄花在营养成分的组成上并无显著差异,而在含量上原产于贵州的核桃品种具有明显优势,尤以‘黔核7号’品质突出,‘香玲’品质相对较差。
