新疆主要栽培杏品种制汁相关性状评价Evaluation for juicing adaptability of the leading apricot cultivars cultivated in Xinjiang

摘要(Abstract):
为探讨新疆南疆地区加工用杏品种制汁相关性状的评价标准,以轮台国家果树资源圃的库尔勒托永、小白杏、赛买提等18个品种果实为试材,比较南疆加工用杏品种制汁相关性状,结果显示18个杏品种平均单果质量为14.4~52g,出汁率为44.6%~62%,可溶性固形物含量为13.2%~25.4%,可滴定酸含量为0.67%~1.59%,维生素C含量为26.7~146.5mg/kg,糖酸比为4.35~17.09,可溶性糖含量为6.64%~15.52%。以目前生产中仅15%~25%的品种能达到的性状为特级指标,我们提出南疆制汁用杏品种的特级标准为:单果质量≥40g、出汁率≥58%、可溶性固形物含量≥21%、维生素C含量≥100mg/kg、糖酸比达到8.31~12.19且可溶性糖含量为7.81%~15.11%。
