果实低温贮藏期间糖代谢变化研究进展Advances on sugar metabolism study in fruits stored at low temperatures

摘要(Abstract):
糖是重要的能源和结构组分,是果实风味和品质的重要指标。低温冷藏是果实贮藏的重要方法,近年来低温下果实糖代谢变化及其作用研究也受到越来越多的重视,并且取得了一定的进展。为了更好的了解低温下采后果实的可溶性糖变化情况,本文综述了果实糖分积累过程、低温下采后果实的糖代谢变化、糖在抗低温逆境胁迫中的作用等。并提出了运用分子生物学和遗传手段来研究低温下果实的糖代谢酶及其酶基因仍是今后的研究方向,糖转导途径以及糖的抗冷机制是今后研究的重点和难点。
