不同地方品种皱皮木瓜有机酸检测与差异分析Detection and differential analysis of fruit organic acids among different local wrinkled papaya varieties (Chaenomeles speciosa) by GC-MS

摘要(Abstract):
【目的】了解我国皱皮木瓜不同地方品种资源果实有机酸组成与含量差异。【方法】通过甲基化衍生、GCMS检测进行我国10个主产区皱皮木瓜地方品种果实有机酸鉴定和含量测定。【结果】外标浓度与峰面积线性相关,各样品TIC基线平稳,成分峰分布均匀,分离度较高。全部样品共检出5大类43种有机酸,苹果酸含量最高。各样品总酸含量(w)在85.02~170.76 mg·g~(-1),山东临沂最高,陕西白河最低。10个样品共有成分33种,总酸含量与长链脂肪酸极显著正相关,与低碳羧酸显著正相关,与芳香酸负相关。聚类距离为5时10个地方品种资源共聚为4枝,四川仪陇、安徽宣城、陕西白河、广西南宁、湖北长阳聚为第1枝,重庆綦江、浙江淳安聚为第2枝,贵州正安、山东临沂样品聚为第3枝,云南景洪为第4枝。【结论】10个皱皮木瓜地方品种均属苹果酸型果实,果实有机酸组成种内差异较小,组分含量种间差异显著。
