不同类型钾肥对‘新梨7号’果实风味品质的影响Effect of different K fertilizers on fruit flavor quality of 'Xinli No.7' pears

摘要(Abstract):
【目的】探讨不同类型钾肥对梨果实糖酸、香气等风味品质的影响。【方法】以‘新梨7号’为研究对象,不同类型钾肥试验设置了3个处理:T1氯化钾、T2硫酸钾、T3硝酸钾,以不施用钾肥为对照,于生长季节进行土施。【结果】不同类型钾肥处理‘新梨7号’果实的总糖含量显著高于对照,以T2硫酸钾处理果实总糖含量最高,较对照提高34.55%,其次为T3硝酸钾处理,再次为T1氯化钾处理。硫酸钾处理果实果糖、葡萄糖、蔗糖含量均为最高,分别比氯化钾处理提高了15.96%、27.32%、52.81%,比硝酸钾处理提高了11.36%、27.75%、20.45%。不同类型钾肥处理‘新梨7号’果实的总酸含量均高于对照,以T3硝酸钾处理果实总酸含量最高,较对照提高103.68%,其次为T2硫酸钾处理,再次为T1氯化钾处理。对照和钾处理‘新梨7号’果实均以苹果酸含量最高,除氯化钾处理以富马酸含量最低外,其余均以酒石酸含量最低。不同类型钾肥处理对‘新梨7号’果实有机酸含量的影响不同。钾肥处理‘新梨7号’果实的挥发性香气物质种类和含量均显著高于对照。不同类型钾肥处理对‘新梨7号’果实香气物质种类存在差异,其中氯化钾处理果实香气物质种类最多,为78种,果实香气物质总含量以硫酸钾处理最高,为746.8 ng·g-1。【结论】钾肥处理提高了‘新梨7号’梨果实糖酸、香气等风味品质,以硫酸钾处理效果最好。
