呼吸活性和能量代谢与荔枝果实品质劣变的关系Respiratory activity and energy metabolism of harvested litchi fruit and their relationship to quality deterioration

摘要(Abstract):
通过短期厌氧和纯氧处理探讨了呼吸活性和能量代谢对采后荔枝果实衰老和品质劣变的影响。结果表明,2种处理均降低褐变指数和细胞膜透性,但提高呼吸强度、腺苷三磷酸(ATP)含量、能荷值和交替氧化呼吸途径在总呼吸中的比例,并且短期厌氧处理效果好于纯氧处理;另外,短期厌氧处理提高了果肉乙醛、乙醇含量,降低了果皮细胞色素氧化呼吸途径在总呼吸中的比例,而纯氧处理作用则相反。结果表明能量水平与呼吸活性密切相关,并参与荔枝果实采后衰老和品质变化的调控。
