梨果实酚类物质含量及抗氧化能力Study on phenolics content and its antioxidant activity in the fruits of pear species

摘要(Abstract):
【目的】探明梨不同系统和不同品种间酚类物质含量分布特征,筛选具抗氧化活性的优良品种。【方法】以5大栽培梨系统的38个品种成熟果实为试材,测定果肉中绿原酸、总黄酮及总酚含量,并采用铁离子还原能力(FRAP)法、DPPH和ABTS+·自由基清除法评价其抗氧化能力差异,分析其酚类物质含量和抗氧化能力的关系。【结果】不同梨系统间绿原酸、总黄酮、总酚含量和抗氧化能力均表现为秋子梨最高,新疆梨、西洋梨和白梨次之,砂梨最低;不同梨系统内品种间亦存在差异。酚类物质含量与抗氧化能力间具有极显著的相关性(P≤0.01),相关系数和关联度均表现为"总酚>总黄酮>绿原酸"。【结论】秋子梨系统果实果肉中酚类物质含量和抗氧化能力高于其他系统,且具有较为丰富的遗传多样性;‘红南果’品种在各项指标上均明显高于其他品种,具有较高的抗氧化潜能和利用价值。
